French Bread Pizza

I've been asked several times to post this recipe, so here it is.

This is an all-time family favorite in our house.


1 Loaf French Bread, sliced lengthwise
1 Small jar Prego Spaghetti Sauce
1 lb bulk sausage crumbled, fried and drained
or
1 Small pkg sliced pepperoni
1 Med Onion
1 Bell Pepper
1 Small Can Olives (sliced)
2 C Mozarella Cheese
1/2 C Parmesan Cheese
Margarine for spreading on French Bread

Slice onion into rings and pepper into narrow strips; saute veggies in oil until onions are translucent and pepper is wilted but still crisp. Drain on paper towel or paper bag and prepare sausage or lay rings of pepperoni on top of Prego.

Cover cookie sheet with foil, lay both halves of French Bread on cookie sheet. Spread margarine on both halves, then 1/2 jar Prego on each half of loaf. Divide prepared sausage or lay rings of pepperoni atop Prego. Sprinkle 1/2 Mozarella on each half of French Bread, then sprinkle each half generously with Parmesan cheese. Bake in oven at 350 degrees for about 10-12 minutes. Serves 4-6 generously.

You can add/subtract whatever your family likes on pizza.

*Note - you must spread the bread with margarine or the sauce will drain down into the bread, olive oil will not do.

This is my own original recipe and you can adjust it to you own taste. You can also re-constitute the veggies from dried food storage as well as use TVP in place of the meat.

Walnut Baklava

This is one of my absolute favorite treats! And not too hard to make either.

INGREDIENTS:
4 cups finely chopped walnuts
1/4 cup sugar
1 tablespoon ground cinnamon
1 cup butter, melted
1 (16 ounce) package frozen
phyllo dough, thawed

SYRUP:
1 cup sugar
1/2 cup water
1/4 cup honey
1 teaspoon lemon juice
1 teaspoon vanilla extract

DIRECTIONS:
1. In a bowl, combine the walnuts, sugar and cinnamon; set aside. Grease a 13-in. x 9-in. x 2-in. baking dish with some of the melted butter. Unroll phyllo dough sheets (keep dough covered with plastic wrap while assembling).
2. Place one sheet of phyllo in baking dish; brush with butter. Top with a second sheet; brush with butter. Fold short ends under to fit the dish. Sprinkle with about 1/4 cup nut mixture. Repeat 18 times, layering two sheets, brushing with butter and sprinkling with nut mixture. Top with remaining dough; brush with butter. Cut into 2-in. diamonds with a sharp knife.
3. Bake at 350 degrees F for 45-55 minutes or until golden brown. Meanwhile, in a saucepan, combine the syrup ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Pour over warm baklava. Cool on a wire rack.

Favorite Chicken/Turkey Salad

Ingredients

1/2 cup mayonnaise (use Best Foods -absolutely not Miracle Whip!)
1 teaspoon fresh lemon juice
2 tablespoons curry powder
2 cups cooked chicken or turkey -- chopped
1/4 cup diced celery
1/2 cup Thompson seedless grapes -- halved
1/4 cup almond slivers (cashews are also delicious)

Instructions:

Blend mayonnaise, lemon juice, and curry powder. Mix into remaining ingredients.

Chill at least one hour before serving.
Serving Ideas : Serve on whole leaves of Romaine lettuce.

Olive Garden Capellini Primavera Recipe

Now here's some good Italian food - try it, it's great! You all know how I love to cook, okay and eat.


Ingredients:
1/4 pound Butter
1 1/2 cup Onion -- chop
3/4 cup Carrots -- julienne
12 ounces Broccoli florets (1" pieces)
8 ounces Mushrooms -- sliced
1 1/4 cup Yellow squash (sliced thin/halved)
1 teaspoon Garlic -- minced
1 1/2 cup Water
1 tablespoon Beef bouillon granules
1/4 cup Oil-packed sun-dried tomatoes, minced
1 1/4 cup Crushed tomatoes in puree
1 tablespoon Fresh parsley -- chop fine
1/4 teaspoon Oregano
1/4 teaspoon Rosemary -- ground
1/8 teaspoon Crushed red pepper flakes
1 pound Fresh angel hair pasta -- cooked and drained
1/2 cup Parmesan cheese


Directions:
Melt butter in a Dutch oven over medium heat. Saute onions, carrots and broccoli for 5 minutes. Add mushrooms, squash and garlic and saute for 2 minutes longer. Add remaining ingredients, stir well and bring to a simmer.
